Bubbly Cheesy Stuffed Tomatoes

I love spring! Not only does the weather warm up, but the Farmer’s Market opens up again. I love the Farmer’s Market. Every Wednesday and Saturday morning, my hubby and I walk down to the Farmer’s Market and load up on fresh veggies.  We typically come home with zucchini, corn, tomatoes and onions.

Tomorrow I’m hoping to find some plum tomatoes so I can whip up some Bubbly Hot Cheesy Stuffed Tomatoes.

After looking at this recipe, you may be tempted to use whatever tomatoes you have on hand, but I want to caution you.  This recipe calls for plum tomatoes because they’re not nearly as watery as other tomatoes.  You need to use the inner pulp of the tomatoes and you don’t want them to be runny.  Ok…on to the recipe.

Here’s what you’ll need:

4 plum tomatoes
1/2 cup shredded mozzarella cheese
2 Tbsp grated fresh Parmesan cheese
1/4 cup fresh basil leaves, torn small
1 garlic clove, minced or grated
salt and pepper to taste

Let’s get started…

Preheat your oven to 400 degrees.
Cut the plum tomatoes in half lengthwise and scoop the insides out into onto a cutting board.
Chop up the insides that you scooped out and put them in a mixing bowl.
Add the remaining ingredients to the bowl and mix together until well blended.
Set the tomato shells on a baking sheet cut side up.
Spoon the yummy mixture into the tomato shells on the baking sheet. Top with more Parmesan cheese if desired. (As far as I’m concerned, you can never have too much cheese)
Put in oven and bake for 10 to 15 minutes or until the cheese is melted and starting to brown.
Remove and let cool slightly. Serve warm.

See…I told you this was easy!  Serve it up with some grilled chicken or a juicy steak and you have an out of this world tasty meal!

Makes 4 servings.

This recipe is great for those of you who have gluten issues or are on a low carb diet. If you’re not on a low carb diet or you don’t worry about gluten-free, you could add bread crumbs to the top before baking.
